"As you know, Highland Park is Scotland's northernmost distillery. However, we don't intend to rest on our laurels; we intend to become the southernmost Scotch whisky distillery in the world by opening a distillery in Antarctica's South Orkney Islands.
We've checked with our friends at the Scotch Whisky Association and we'll be able to label the whisky 'Scotch' as the South Orkney Islands have been owned by the British since 1962.
Our friend Gavin Hewitt, Chief Executive of The Scotch Whisky Association, said: "The team at Highland Park are so passionate about creating a distillery on the British Antarctic islands, we simply couldn't resist giving them the seal of approval. The Orcadians seem to thrive in extreme weather conditions and I'm sure they will have many adventures in the Antarctic. In the meantime, we'll continue to enjoy whisky from northern latitudes."
I've just returned from my second trip to the South Orkney Islands; it is a fairly harsh environment but there is something familiar about gales which reach 120 miles per hour.
The islands are ice-locked from April to November and the aim is to have the distillery operational by late 2010. The spirit will be left to sleep and shiver for a minimum of 15 years prior to bottling. This is longer than at our Kirkwall distillery as the cold climate on the South Orkney Islands means a longer maturation period is required.
We plan to maintain Highland Park's trademark balance of aromatic peat and heather honey sweetness, so malted barley will be shipped in from the Highland Park distillery on Orkney. We anticipate the whisky will have a mild salty aftertaste - the result of ageing in a cold sea-sprayed climate.
That's what I call Highland Park on ice...

Muuten hyvä, mutta eihän tuo ole sittenkään eteläisin skottitislaamo. Nimittäin, Scapa on tislannut kyseisillä saarilla jo vuodesta 1992 ja heidän Scapa South -tislaamonsa sijaitsee 69 metriä etelämpänä kuin plänätty HP. Käsittääkseni vastikään julkaistu Scapa 16 on nimenomaan tuolta etelän tislaamosta, mikä selittää suhteettoman suuren hintaeron vanhaan 14-vuotiaaseen.
Loppukevennyksenä ystävälliset terveiset Sievin naapurikaupunkiin: Clynelish on luopunut aikeistaan aloittaa tislaustoiminta Pääsisäissaarilla. Tämä ihan siksi, että ne patsaat kuulema saattavat alkaa rapautua funguksen vaikutuksesta. ;D
